Creamy Tomato Soup

Melt the butter in a large pot over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 5 minutes.

Add the crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally.

Using an immersion blender or transferring the soup to a blender, blend the soup until it's smooth.

Return the soup to the pot and stir in the heavy cream. Heat the soup over low heat until it's hot but not boiling.

Serve the soup hot, garnished with croutons, fresh herbs, or a dollop of sour cream, if desired. Enjoy!
