Prepare the Shrimp:

  1. Start by patting the shrimp dry with paper towels. This ensures a good sear when cooking. Season the shrimp with a pinch of salt and black pepper.

Cook the Pasta:

  1. In a large pot of salted boiling water, cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.

Sauté the Shrimp:

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp to the skillet in a single layer, making sure not to overcrowd the pan. Cook for about 1-2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Prepare the Sauce:

  1. In the same skillet, add the remaining 1 tablespoon of olive oil and 4 tablespoons of unsalted butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until the garlic becomes fragrant and slightly golden.

Deglaze with Wine:

  1. Pour in the white wine to deglaze the pan, using a wooden spoon to scrape up any browned bits from the bottom. Let the wine simmer for 2-3 minutes to reduce slightly.

Combine the Ingredients:

  1. Return the cooked shrimp to the skillet. Add the cooked pasta, lemon juice, and chopped parsley. Toss everything together to ensure the shrimp and pasta are well-coated with the flavorful sauce. Cook for an additional 2-3 minutes to heat everything through.

Serve:

  1. Plate the Shrimp Scampi onto serving dishes. If desired, sprinkle grated Parmesan cheese over the top for an extra layer of flavor. Garnish with additional chopped parsley.
