Hearty Beef Shepherd’s Pie

Instructions
Prepare the Potatoes:

Place the peeled and cubed potatoes in a pot of salted water. Bring to a boil and cook until the potatoes are tender when pierced with a fork.

Drain the potatoes and return them to the pot. Add butter, milk or cream, salt, and pepper. Mash the potatoes until smooth and creamy. Set aside.
Prepare the Beef Filling:

In a large skillet, heat the cooking oil over medium heat. Add the chopped onion and diced carrots. Sauté until the vegetables are softened and the onions are translucent.

Add the minced garlic and ground beef to the skillet. Cook, breaking up the beef with a spatula, until it's browned and cooked through.

Stir in the tomato paste, Worcestershire sauce, frozen peas, thyme leaves, and beef broth. Simmer for a few minutes until the mixture thickens. Season with salt and pepper to taste.
Assemble the Shepherd's Pie:

Preheat your oven to 400°F (200°C).

Transfer the beef filling into a baking dish, spreading it evenly.

Spoon the mashed potatoes on top of the beef filling. Use a fork to create a textured surface on the potatoes. This will help them get nicely browned in the oven.

If desired, sprinkle shredded cheddar cheese on top of the mashed potatoes for an extra layer of flavor.
Bake and Serve:

Place the baking dish in the preheated oven and bake for about 20 minutes, or until the mashed potatoes are golden brown on top.

Once baked, remove from the oven and let it cool slightly before serving.
